Instructions
In a large bowl, mix the whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover the dough and let it rest for 15-20 minutes.
Mash the boiled potatoes in a bowl until smooth. Add red chili powder, garam masala, cumin seeds, chopped green chili, coriander leaves, and salt to taste. Mix well to create the stuffing.
Divide the dough into equal-sized balls. Roll out one ball into a small circle on a floured surface.
Place a portion of the potato stuffing in the center of the rolled dough circle. Fold the edges over the stuffing and pinch to seal tightly.
Gently roll out the stuffed dough ball into a flat circle, being careful not to tear the dough.
Heat a skillet or tawa over medium heat. Cook the rolled paratha for 1-2 minutes on one side until brown spots appear.
Flip the paratha, apply oil or ghee on the cooked side, and cook the other side until golden and crispy. Flip again and apply oil or ghee, cooking both sides evenly.
Remove from heat and serve hot with butter, yogurt, or pickles.
