Ingredients
- 500 gramsFresh spinach (Palak)
washed and chopped
- 250 gramsPaneer
cut into cubes
- 1 mediumOnion
finely chopped
- 1 mediumTomato
pureed or finely chopped
- 2 piecesGreen chilies
finely chopped
- 1 ½ tablespoonsGinger-Garlic paste
- 1 teaspoonCumin seeds
- 0 ½ teaspoonTurmeric powder
- 0 ½ teaspoonRed chili powder
- 1 teaspoonGaram masala
- 3 tablespoonsFresh cream
optional for creaminess
- 2 tablespoonsOil or Ghee
- 1 teaspoonSalt
adjust to taste
- 1 cupWater
to adjust gravy consistency
Instructions
Blanch the spinach in boiling water for 2-3 minutes. Drain and immediately transfer to ice-cold water. Drain again and blend into a smooth puree.
Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies; sauté for 2 minutes until raw smell disappears.
Add tomato puree and cook until oil separates from the masala.
Add turmeric powder, red chili powder, and salt. Mix well.
Add the spinach puree and mix well. Cook for 5-7 minutes on medium heat.
Add paneer cubes and cook for another 5 minutes, stirring gently.
Add garam masala and fresh cream. Mix and cook for another 2 minutes.
Adjust the consistency with water if needed. Cook for 1-2 minutes and remove from heat.
